Debating Organic Food

Is organic food healthier than non-organic food? Who grows organic food - and how? Students explore these questions in two readings, with discussions questions and a research assignment.

To the Teacher:

In the last decade organic food has grown into a $28 billion industry. Many people buy organic as a way of eating healthier and reducing environmental impact, or because they think food grown without synthetic pesticides or fertilizers tastes better. But organic food also has it critics. Some critics question the health benefits of organic food. Others argue that organics have been taken over by corporate agribusiness.   This lesson examines these criticisms and the current state of the organic food movement. The lesson consists of two readings. The first reading explores whether eating food with the organic label is healthier. The second reading looks at concerns about the corporate takeover of the organic industry and what advocates are doing to promote a more robust vision of naturally grown food. Questions for student discussion and a small group research project follow.  

Introduction

Ask students:  What is organic food?   Work with students to come up with a definition:  According to the Organic Trade Association, organic food is grown without the use of standard agribusiness inputs such as synthetic pesticides, petrochemical fertilizers, antibiotics, and growth hormones.   Now ask:  Do you ever eat organic food? Or would you eat it, if you could afford it? Why or why not? Record students' responses in a T-chart, writing "Reasons to eat organic" on the left side, and "Reasons not to eat organic" on the right.   Tell students that today we'll be learning about some debates people are having about organic food.  

Student Reading 1 Is Eating Organic Healthier?

In the last decade organic food has grown into a $28 billion industry.     Consumers have sought out organic foods for a variety of reasons, including:

  • they view organic foods as healthier in general
  • they want to avoid personal exposure to pesticides
  • they want to keep farmworkers safe from pesticides
  • they want to support more environmentally sustainable agricultural practices

  However, some people question whether organic foods really are healthier.  In 2012, scientists at Stanford University released a study arguing that there was little difference in health benefits between organic and non-organic foods. In a press release about the study,   Michelle Brandt , Associate Director of Digital Communications and Media Relations at the Stanford School of Medicine, writes:  

Critics of the study say that it is misleading. To many organic farming advocates, the nutritional value of organic food (e.g. the amount of vitamins, minerals and healthy fatty acids it contains) is the wrong measure by which to evaluate the health benefits of organic foods.  What matters most, they say, is that organics don't rely on chemical pesticides and fertilizers, which benefits both consumers and the environment.   Writer Michael Pollan , author of The Omnivore's Dilemma , discussed the Stanford University study in a conversation posted by National Public Radio on September 4, 2012. He argued:

Assignment: Find an organic brand

Before students begin the next reading, ask them: If you've ever consumed organic foods (perhaps milk, yogurt, eggs, cereal, produce....), can you name any of the brands?   

If students come up with brands, list them on the board. Tell them we'll be coming back to this list at the end of the lesson.

If they haven't eaten organic food or can't name any brands, assign them this task:  If possible, find one food in the store or at home that is labeled "organic."  (Let students know that many major grocery chains now carry organic brands.)  Suggest that they pick a food or product they might be interested in eating themselves.

Ask them to bring the name of the food and the brand to school the next day.  (Alternatively you can skip the assignment and use this list of organic foods for the small group project that follows the reading below.)

After making the assignment, ask students: Do you think it matters what company makes your organic food? Why or why not?   

Student Reading 2 Has the Agribusiness Industry Taken Over "Organic"?

As organic food has gotten more popular, an increasing number of large corporations have gotten into the business of selling food produced without synthetic pesticides or fertilizers. The involvement of major multinational corporations in the market has raised concerns about whether the original principles of the organic farming movement are being watered down.   In its most narrow definition, "organic" involves growing food without synthetic chemicals. However, the original organic movement promoted a far more robust vision of "sustainable farming."   The pioneers of organic agriculture believed in challenging industrial agriculture's vast fields of uniform crops, its exploitation of farmworkers, and its love of heavily processed food. In his 2006 book The Omnivore's Dilemma , author Michael Pollan writes, "Acting on the ecological premise that everything's connected to everything else, the early organic movement sought to establish not just an alternative mode of production (the chemical-free farms), but an alternative system of distribution (the anti-capitalist food co-ops), and even an alternative mode of consumption (the 'countercuisine')."   With the rise of organic food as a big-business market, this more radical vision of organic food is becoming harder to find. As New York Times correspondent Stephanie Strom writes in a July 7, 2012 article:  

Big food has also assumed a powerful role in setting the standards for organic foods. Major corporations have come to dominate the board that sets these standards.

As corporate membership on the board has increased, so, too, has the number of nonorganic materials approved for organic foods on what is called the National List. At first, the list was largely made up of things like baking soda, which is nonorganic but essential to making things like organic bread. Today, more than 250 nonorganic substances are on the list, up from 77 in 2002.

  As major corporations have gotten involved with organic food, they have adopted practices that some people would think of as inconsistent with the original principles of organic farming. In a July 9, 2009 Denver Post   article, food writer Ari LeVaux argues:

The Chinese are taking over market share, especially of vegetables and agricultural commodities like soy, thanks to several American-based multinational food corporations that have hijacked the organic bandwagon they only recently jumped onto.

When mega-corporation Dean Foods acquired Silk soy milk - which I used to drink as if it were the staff of life - the prospects looked good for American organic soy farmers. Silk had always been committed to supporting domestic organic farmers, and with the new might of Dean Foods behind it, I assumed that Silk would likely grow. Silk did grow, but it also dropped its commitment to domestic soy.

When Midwestern farmers and farmer cooperatives in the heart of American soy country were told by Silk they had to match the rock-bottom cost of Chinese organic soybeans, they found it was a price they simply could not meet. Organic agriculture is labor-intensive, and China's edge comes largely from its abundance of cheap labor.

"Dean Foods had the opportunity to push organic and sustainable agriculture to incredible heights of production by working with North American farmers and traders to get more land in organic production," says Merle Kramer, a marketer for the Midwestern Organic Farmers Cooperative, based in Michigan. "But what they did was pit cheap foreign soybeans against the U.S. organic farmer."

Few Silk products are certified organic anymore, and some are processed with hexane, a neurotoxin listed as an air pollutant by the EPA. Yet this country allows hexane-processed soymilk to be labeled "natural," and if it contains organic ingredients, the label "made with organic ingredients" can still be used...

Consumers buy organic for several reasons: They are worried about the heavy environmental impacts of agribusiness; they want cleaner and safer working conditions for farmworkers; and they believe that organic food is simply healthier to eat - or at least less likely to be contaminated with toxic chemicals.

Unfortunately, the import-fueled corporatization of so-called "organic" food is making it less likely that your food will have all of these attributes.  

This includes the use of a new label, "Certified Naturally Grown." Food that is sold under this label would have to meet a more rigorous set of standards than do organics produced by industrial agribusiness. The website of the Certified Naturally Grown organization explains:

  • What values did the original founders of the organic food movement intend to promote?  What do you think about them?
  • What are some of the practices used by industrial agribusiness corporations selling products that the original founders of the organic movement might find problematic?
  • According to the reading, what are some of the aims of the Certified Naturally Grown label?
  • Defenders of corporate agribusiness argue that industrial practices are needed to bring organics to a broad public, instead of to just a small elite. What do you think of this argument? How might critics of industrial agriculture respond?

Small Group: Research a brand 

If you assigned students to find organic brands as a homework assignment, ask them to report what they found, and list the names on the board.

If they went to the store, was it hard to find organic foods there?  If students had trouble finding organic brands, draw from this list.    (If students found that their stores did not carry organic foods, you might want to give students this alternative research assignment:  Has access to healthy food been an issue in your community, or communities like yours?  What steps have people taken in communities around the country to address this issue?)

Once you have your list of brands, ask students to break into groups of four or five. Assign each group one of the brands to research. Have each group decide how they will research this brand, including the questions below. Ask students to add any other questions they have to the list, and research those as well. 

  •  Who owns this brand?
  •  How big is the company?
  •  Does the company market only organics, or both organic and non-organic food?
  •  Are there criticisms of the company's organic practices? If so, what are they?
  •  Would the company or brand live up to the "Certified Naturally Grown" standard?

Tell students that they will be sharing their research findings with the class and to prepare a five minute presentation. Use small-group presentations as the basis for further discussion.

Organic foods are believed to be safer than conventional ones, and it has natural origins, which makes it a reasonable choice. According to the requirements of the British Soil Association , organic food should consist of at least 95% natural ingredients (Soil Association). “Natural” means the ingredients should come from the plants and animals grown or bred without any chemicals or artificial nutrients. In the United States, there also exists strict requirements for the products labeled as organic: the U.S. Department of Agriculture has enabled a special certification program that requires organic food to meet specific standards.

In correlation to this, customers should pay attention to the labeling on the packaging of food products. If it says 100% organic , this means the product has been manufactured without the use of any chemicals or artificial additives; simply organic means the product consists of 95% natural ingredients (MayoClinic). Returning to the standards of organic nutrition, organic food cannot contain, in particular, such ingredients as synthetic fertilizers or pesticides; genetically engineered organisms; raw manures cannot be used to fertilize fields as well, because of its potential contamination (Canadian Living). The other 5% of ingredients are allowed as they are not available in organic form, and for non-food ingredients (such as salt, water, and a restricted number of additives like iron or thiamine).

Organic food is known to be healthier than conventional food. According to recent research in the United States, organic food contains an average of 63% more calcium, 73% more iron, 125% more potassium, and 60% more zinc compared to conventional food products. This is not to mention the fact that common food is about 25% more toxic than the food produced from natural components (Canadian Living). Besides, many people claim it tastes better than other products.

Organic products—not only food, but also textiles and cosmetics—are becoming more popular among people globally. Though the price of organic products is often higher than regular ones, its safety, healthiness, and natural origins fully compensate for this disadvantage.

Organic foods: Are they safer? More nutritious?

Discover the difference between organic foods and their traditionally grown counterparts when it comes to nutrition, safety and price.

Once found only in health food stores, organic food is now a common feature at most grocery stores. And that's made a bit of a problem in the produce aisle.

For example, you can pick an apple grown with usual (conventional) methods. Or you can pick one that's organic. Both apples are firm, shiny and red. They both provide vitamins and fiber. And neither apple has fat, salt or cholesterol. Which should you choose? Get the facts before you shop.

What is organic farming?

The word "organic" means the way farmers grow and process farming (agricultural) products. These products include fruits, vegetables, grains, dairy products such as milk and cheese, and meat. Organic farming practices are designed to meet the following goals:

  • Improve soil and water quality
  • Cut pollution
  • Provide safe, healthy places for farm animals (livestock) to live
  • Enable natural farm animals' behavior
  • Promote a self-sustaining cycle of resources on a farm

Materials or methods not allowed in organic farming include:

  • Artificial (synthetic) fertilizers to add nutrients to the soil
  • Sewage sludge as fertilizer
  • Most synthetic pesticides for pest control
  • Using radiation (irradiation) to preserve food or to get rid of disease or pests
  • Using genetic technology to change the genetic makeup (genetic engineering) of crops, which can improve disease or pest resistance, or to improve crop harvests
  • Antibiotics or growth hormones for farm animals (livestock)

Organic crop farming materials or practices may include:

  • Plant waste left on fields (green manure), farm animals' manure or compost to improve soil quality
  • Plant rotation to keep soil quality and to stop cycles of pests or disease
  • Cover crops that prevent wearing away of soil (erosion) when sections of land aren't in use and to plow into soil for improving soil quality
  • Mulch to control weeds
  • Insects or insect traps to control pests
  • Certain natural pesticides and a few synthetic pesticides approved for organic farming, used rarely and only as a last choice and coordinated with a USDA organic certifying agent

Organic farming practices for farm animals (livestock) include:

  • Healthy living conditions and access to the outdoors
  • Pasture feeding for at least 30% of farm animals' nutritional needs during grazing season
  • Organic food for animals
  • Shots to protect against disease (vaccinations)

Organic or not? Check the label

The U.S. Department of Agriculture (USDA) has set up an organic certification program that requires all organic food to meet strict government standards. These standards control how such food is grown, handled and processed.

Any product labeled as organic on the product description or packaging must be USDA certified. If it's certified, the producer may also use an official USDA Organic seal.

The USDA says producers who sell less than $5,000 a year in organic food don't need to be certified. These producers must follow the guidelines for organic food production. But they don't need to go through the certification process. They can label their products as organic. But they can't use the official USDA Organic seal.

Products certified 95 percent or more organic may display this USDA seal.

The USDA guidelines describe organic foods on product labels as:

  • 100% organic. This label is used on certified organic fruits, vegetables, eggs, meat or other foods that have one ingredient. It may also be used on food items with many ingredients if all the items are certified organic, except for salt and water. These may have a USDA seal.
  • Organic. If a food with many ingredients is labeled organic, at least 95% of the ingredients are certified organic, except for salt and water. The items that aren't organic must be from a USDA list of approved additional ingredients. These also may have a USDA seal.
  • Made with organic. If a product with many ingredients has at least 70% certified organic ingredients, it may have a "made with organic" ingredients label. For example, a breakfast cereal might be labeled "made with organic oats." The ingredient list must show what items are organic. These products can't carry a USDA seal.
  • Organic ingredients. If a product has some organic ingredients but less than 70% of the ingredients are certified organic , the product can't be labeled as organic. It also can't carry a USDA seal. The ingredient list can show which ingredients are organic.

Does 'organic' mean the same thing as 'natural'?

No, "natural" and "organic" are different. Usually, "natural" on a food label means that the product has no artificial colors, flavors or preservatives. "Natural" on a label doesn't have to do with the methods or materials used to grow the food ingredients.

Also be careful not to mix up other common food labels with organic labels. For example, certified organic beef guidelines include pasture access during at least 120 days of grazing season and no growth hormones. But the labels "free-range" or "hormone-free" don't mean a farmer followed all guidelines for organic certification.

Organic food: Is it safer or more nutritious?

Some data shows possible health benefits of organic foods when compared with foods grown using the usual (conventional) process. These studies have shown differences in the food. But there is limited information to prove how these differences can give potential overall health benefits.

Potential benefits include the following:

  • Nutrients. Studies have shown small to moderate increases in some nutrients in organic produce. Organic produce may have more of certain antioxidants and types of flavonoids, which have antioxidant properties.
  • Omega-3 fatty acids. The feeding requirements for organic farm animals (livestock) usually cause higher levels of omega-3 fatty acids. These include feeding cattle grass and alfalfa. Omega-3 fatty acids — a kind of fat — are more heart healthy than other fats. These higher omega-3 fatty acids are found in organic meats, dairy and eggs.
  • Toxic metal. Cadmium is a toxic chemical naturally found in soils and absorbed by plants. Studies have shown much lower cadmium levels in organic grains, but not fruits and vegetables, when compared with crops grown using usual (conventional) methods. The lower cadmium levels in organic grains may be related to the ban on synthetic fertilizers in organic farming.
  • Pesticide residue. Compared with produce grown using usual (conventional) methods, organically grown produce has lower levels of pesticide residue. The safety rules for the highest levels of residue allowed on conventional produce have changed. In many cases, the levels have been lowered. Organic produce may have residue because of pesticides approved for organic farming or because of airborne pesticides from conventional farms.
  • Bacteria. Meats produced using usual (conventional) methods may have higher amounts of dangerous types of bacteria that may not be able to be treated with antibiotics. The overall risk of contamination of organic foods with bacteria is the same as conventional foods.

Are there downsides to buying organic?

One common concern with organic food is cost. Organic foods often cost more than similar foods grown using usual (conventional) methods. Higher prices are due, in part, to more costly ways of farming.

Food safety tips

Whether you go totally organic or choose to mix conventional and organic foods, keep these tips in mind:

  • Choose a variety of foods from a mix of sources. You'll get a better variety of nutrients and lower your chance of exposure to a single pesticide.
  • Buy fruits and vegetables in season when you can. To get the freshest produce, ask your grocer what is in season. Or buy food from your local farmers market.
  • Read food labels carefully. Just because a product says it's organic or has organic ingredients doesn't mean it's a healthier choice. Some organic products may still be high in sugar, salt, fat or calories.
  • Wash and scrub fresh fruits and vegetables well under running water. Washing helps remove dirt, germs and chemical traces from fruit and vegetable surfaces. But you can't remove all pesticide traces by washing. Throwing away the outer leaves of leafy vegetables can lessen contaminants. Peeling fruits and vegetables can remove contaminants but may also cut nutrients.

  • It is undeniable that most of us have consumed conventional foods knowingly, thus putting our lives in danger.

  • Research studies have confirmed that long-term exposure to the chemicals used in conventional foods leads to adverse outcomes among consumers (Gonzalez et al., 2019).
  • In this speech, I seek to change your perspective on organic food by explaining three distinct points. What organic food is, why organic food is more nutritious than conventional food and why organic food is a safer option compared to conventional foods.

  • Main Point 1: We all understand how conventional foods ranging from vegetables, fruits, and animals are reared. The problem we have is that there are many harmful substances used in coming up with conventional food. But are we even aware of what organic food is?
  • Supporting evidence 1: Organic food comes from crops and animals where man-made fertilizers and pesticides are not used.
  • Supporting evidence 2: Organic food differs significantly from conventional foods in that instead of using fertilizers and pesticides, methods such as crop rotation, hand weeding, and mulches are used. Similarly, instead of injecting hormones into animals, they are left to roam freely (Gonzalez et al., 2019).
  • Transition: Next, it is crucial for you to understand why organic foods are more nutritious.
  • Main Point 2: We all know petrol and diesel are crucial for the performance of our cars. However, when we are let to make a choice for higher performance, most of us will select diesel. This is the same argument with conventional and organic foods.
  • Supporting evidence 1: Organic food contains vitamins C, D, and E as well as other essential minerals. These are crucially in improving the nutrition among its consumers, and these vitamins conspicuously lack in conventional foods.
  • Supporting evidence 2: Organic foods do not contain any preservatives, contaminants, artificial sweeteners, or Monosodium Glutamate (MSG’s). Eating organic foods thus lowers incidences of cancer, learning disorders, cardiovascular diseases, and obesity (Popa et al., 2019).

  • Main point 3: Conventional food growing processes such as the use of pesticides pollute the environment, which in turn affect our health.
